Slow Cooker Pumpkin Spice Oatmeal

    • non-stick cooking spray
    • 1 cup steel-cut oats
    • 3 cups milk (I used almond milk. Use what you like!)
    • 1 cup water
    • 1 cup pumpkin puree
    • 1 teaspoon vanilla extract
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon ground ginger
    • pinch of nutmeg
    • pinch of salt

Toppings: chopped pecans, raisins, maple syrup, brown sugar

-Spray the inside of your slow cooker with non-stick cooking spray.

-Add all ingredients into the slow cooker and stir to combine.

-Set the slow cooker to LOW and cook for 6 to 8 hours. If your slow cooker is

programmable, set the timer for 6 hours on LOW and then set it to keep warm

for the remainder.

-Stir before serving. Add toppings! Raisins and chopped nuts add great texture;

sweeten with a swirl of maple syrup or brown sugar.
