Chicken Guacamole Wraps (6 servings)
- 2 avocados, peeled and diced
- juice from 1 lime
- 1 large shallot, minced (about 2 tablespoons)
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon sea salt
- 1/2 jalapeño pepper, minced
- 1/3 cup chopped cilantro
- 2 plum tomatoes, diced
- 3 cups cooked chicken, cut into bite-sized (3/4-inch) pieces
- 6 tortilla wraps
-Place all ingredients except chicken and tortilla wraps into a medium-sized bowl.
Mix well until combined.
-Stir in chicken.
-To assemble: place approximately 1/2 cup of chicken mixture into the center of a wrap.
Fold in the sides, then lift the end closest to you over the top and roll away from you to
enclose the ingredients. Serve immediately.
