Chicken Taquitos

  • 3 cups cooked shredded chicken (a store-bought rotisserie chicken is perfect!)
  • 1/2 cup sour cream
  • 1/2 cup salsa (mild, medium or hot--your preference!)
  • 1 1/2 cups shredded colby jack cheese
  • 1 1/2 cups chopped fresh spinach

18 (6-inch) corn tortillas

-preheat your oven to 350 degrees fahrenheit.

-combine all ingredients in a medium-sized bowl.

-fill the tortillas: lay the tortilla flat. Spread about 1/4 cup of the chicken mixture on half of the tortilla

(the half that is closest to you), keeping the filling about 1/2 inch away from the edges. The filling will

ooze as you roll the tortilla, so try your best to only spread it onto half!

-roll the tortilla, cigar-like, starting with the edge closest to you (where the filling is) and rolling away

from you. Continue until all of the tortillas are filled.

-bake for 20 minutes, until the tortillas are crisp and the cheese has melted
