No-Stress Cranberry Sauce

    • 1 bag (12 to 14 ounces) fresh cranberries, rinsed (reserve 1/3 cup and set aside)
    • 2/3 cup sugar
    • 1 tablespoon orange zest
    • juice from 1/2 orange
    • 1 cinnamon stick (1/4 teaspoon ground cinnamon)
    • 1/8 teaspoon fresh ground nutmeg (use ground nutmeg if fresh isn't available)
    1. Stir all ingredients except reserved 1/3 cup cranberries in a small saucepan until combined.
    2. Cook over LOW heat, stirring occasionally, until cranberries start to soften (about 10 minutes).
    3. Increase heat to MEDIUM/LOW. Continue to cook, stirring occasionally until the cranberries burst (about 5 minutes).
    4. Stir in remaining cranberries. Cook for 1 to 2 minutes until the added cranberries start to soften. Taste and adjust for seasoning--add more sugar or orange juice, if necessary.
    5. Remove cinnamon stick and allow cranberry sauce to cool before serving.
