Turkey and Cheese Rollups with Arugula Pesto

Arugula Pesto Ingredients:

    • 4 cups arugula
    • 1/4 cup grated parmesan cheese
    • 1/4 cup pine nuts
    • 2 tablespoons olive oil
    • 1 teaspoon fresh lemon juice
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon salt

Sandwich ingredients:

    • 1 large loaf (uncut) bread, such as sourdough
    • 1/3 pound thinly sliced deli turkey
    • 1/3 pound thinly sliced swiss cheese
    • arugula pesto

-add all pesto ingredients to the bowl of your food processor. Pulse until thoroughly chopped and

combined.

-Using a large serrated knife, carefully slice the top and bottom off of the loaf of bread. Horizontally cut

the remaining bread into 3 (possibly 4) slices, approximately 3/4-inch thick. Remove the crusts from

the bread slices.

-Using a rolling pin, flatten the bread slices, making them as thin as possible.

-Spread the flattened bread slices with the arugula pesto. Layer the turkey and cheese on top of the

pesto.

-Carefully roll the bread with the filling, forming a log. Wrap in plastic wrap and refrigerate until ready

to serve.

-When serving, cut the logs into slices approximately 1-inch thick.
