Pesto

  • 2 cups loosely packed fresh basil leaves
  • 3 cloves roasted garlic (or 2 cloves fresh garlic)
  • 1/4 cup pine nuts
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup grated Parmigiano Reggiano
  • salt & pepper, to taste

-Place the basil, garlic and pine nuts in a food processor or blender.

-Pulse until your ingredients are coarsely chopped and mixed.

-Drizzle in the oil and process until smooth.

-Season with salt and pepper, add in the cheese and process until combined.
