Ginger/Soy Shrimp Salad (4 servings)

Marinade Ingredients:

    • 1 1/2 tablespoons soy sauce
    • 1 1/2 tablespoons honey
    • 1 tablespoon grated fresh ginger
    • 2 cloves garlic, crushed
    • 1 lb jumbo (16 to 20 CT) shrimp, peeled with veins removed

Dressing Ingredients:

    • 1/4 cup olive oil
    • juice from 2 large or 3 small limes
    • 2 tablespoons honey
    • 1 tablespoon grated fresh ginger
    • 1 tablespoon dijon mustard

Salad Ingredients:

    • 6 cups salad greens
    • 1 cup shredded red cabbage
    • 1 1/2 cups assorted grape tomatoes

-Combine marinade ingredients with shrimp in a small bowl. Allow to marinate for

10 minutes while you prepare your salad and dressing.

-Whisk dressing ingredients together in a small bowl.

-Assemble salad greens/cabbage/tomatoes on a platter.

-Preheat your broiler to HIGH.

-Arrange the shrimp in a single layer on a broiler pan (or rimmed baking sheet).

-Broil the shrimp for 4 to 5 minutes, until cooked through and pink in color.

-Arrange the shrimp on top of the salad and drizzle with dressing.
