Granola
- 3 cups rolled oats (extra-thick if you can find them! NOT quick-cooking)
- 1/2 cup raw sunflower seeds
- 1 cup flax meal
- 3/4 cup chopped nuts (use your favorite!)
- 1 tablespoon ground cinnamon
- 1/2 teaspoon sea salt (omit salt if using salted nuts)
- 1/2 cup pure maple syrup (NOT artificial syrup, this recipe will not work with the fake stuff)
- 1/4 cup coconut oil, melted
- 1/4 cup brown sugar
- 2 tablespoons agave syrup
- 1 tablespoon vanilla extract
-Preheat your oven to 300 degrees Fahrenheit. Line a large, rimmed baking sheet with parchment.
-In a large bowl, combine oats, sunflower seeds, flax meal, nuts, cinnamon and salt.
-In a small bowl, whisk together maple syrup, coconut oil, brown sugar, agave syrup and vanilla extract. Stir into
the dry ingredients until well-combined.
-Spread the granola evenly onto your prepared pan (do not compact or press down).
-Bake for 20 minutes, until golden brown. Allow the granola to cool completely.
-When the granola is completely cooled, break into bite-sized chunks. Store in an airtight container. (I can't say
for sure how long the granola will keep; we tend to demolish it in this house within 10 days! It should keep at
least 10 days if it's in a tightly-sealed container.)
