Truffle Tots

-1 lb. frozen potato puffs

-2 tablespoons good quality truffle oil (it's expensive, folks!)

-2 tablespoons grated Parmigiano Reggiano

-1 tablespoon chopped fresh parsley

-preheat oven to 425 degrees.

-bake potato puffs for 25 minutes, until cooked through and crispy

-transfer cooked potato puffs into a large bowl. Drizzle with truffle oil. Stir gingerly to coat.

-sprinkle parm cheese and chopped parsley on top. Serve immediately
