Lemon/Almond Tart
- 4 eggs
- 1/2 cup sugar
- pinch salt
- 1/2 cup ground almonds
- 1/2 cup light cream
- 1/3 cup sliced almonds
- zest and juice from 1 lemon
- 1 1/2 tablespoons butter
for garnish: confectioners sugar and sliced almonds
-Preheat oven to 400 degrees.
-In a medium bowl, stir together all ingredients except butter until combined.
-Over medium heat, melt butter in a 10-inch oven-proof skillet.
-When the butter has melted, pour batter into the skillet. Allow to cook for a couple
of minutes, until the edges start to brown.
-Once the edges start to brown, carefully place the skillet into your preheated oven to
finish cooking, approximately 12 to 14 minutes.
-When the tart is done cooking, place under your broiler for one minute to brown the top.
-Sprinkle with confectioners sugar and sliced almonds before serving.
