Chocolate-Banana Oatmeal Muffins

    • 2 ripe bananas
    • 2 eggs
    • 1 cup smooth peanut butter
    • 1 cup old-fashioned oats (not quick-cooking), plus more for sprinkling
    • 1/2 cup honey
    • 1/2 cup cocoa powder
    • 2 teaspoons vanilla extract
    • 1 teaspoon baking powder
    • pinch of salt

-Line a 12-cup muffin tin with paper liners (or use non-stick cooking spray).

-Preheat your oven to 400 degrees (you will bake the muffins for 10 minutes at

400 degrees, then lower the heat to 375 degrees and bake for an additional 9 to

12 minutes).

-Add all ingredients into the bowl of your mixer. Mix on a medium speed until

combined and smooth.

-Scoop into the prepared muffin cups, filling about 3/4 full.

-Sprinkle additional oatmeal on the muffin tops.

-Bake for 10 minutes in your preheated 400 degree oven; after 10 minutes, lower

the temperature to 375 degrees (do not open the oven door) and bake for an

additional 7 to 11 minutes (test with a toothpick-- if the toothpick comes out clean

they are done; if the toothpick is coated in batter, bake until the toothpick comes

out clean).
