Avocado Toast (serves 2)

Seasoning Mix:

    • 1 tablespoon sea salt
    • 1 teaspoon ground black pepper
    • 1/8 teaspoon paprika
    • tiny pinch garlic powder
    • teeny pinch onion powder

Stir all ingredients together in a small bowl. You will have way more than you will need for this recipe! Store excess in an airtight container (or in a zip-lock storage bag). You will be happy to have this on hand already made!

Avocado mixture:

    • 1 avocado, pitted and diced into 1/2-inch chunks
    • 1 teaspoon fresh lemon juice
    • 1 pinch of seasoning mix (see above)

-Mix avocado, lemon juice and seasoning in a small bowl until combined.

For Avocado Toast:

    • 2 slices of the best, thick-sliced, whole-grain, seeded artisan bread that you can find
    • avocado mixture
    • chopped cilantro, for garnish

-Toast your bread. I like to buy an unsliced loaf of 9-grain bread that is bursting with flax and sunflower seeds,

and slice it myself into 3/4-inch slices. Hint: use awesome bread!

-Spread each slice of bread with the avocado mixture. Sprinkle with cilantro. Slice diagonally and serve.
