Fruity Quinoa (adapted from The Meat Free Monday Cookbook by Paul McCartney)

    • 1 cup almond milk
    • 1/2 teaspoon vanilla extract
    • 1/3 cup quinoa (rinse in water to remove bitter coating)
    • 1/4 cup mixed berries of your choice
    • 1 tablespoon chopped pecans or walnuts
    • honey, for drizzling
    1. In a small saucepan over medium/high heat, bring almond milk and vanilla extract to a boil.
    2. Reduce the heat to low and stir in quinoa. Simmer for 10 minutes until most of the liquid has been absorbed.
    3. Remove from heat and stir in berries and nuts.
    4. Divide into two bowls. Drizzle with honey and serve.
