Roasted Parmesan Potatoes
- 6 medium potatoes (russet or Yukon gold are my favorites), scrubbed and cut in half lengthwise
- 4 tablespoons melted butter
- 1/2 cup grated parmesan cheese
- 1 teaspoon sweet paprika
- 1 teaspoon garlic powder
Favorite herbs are a welcome addition! Add a tablespoon each of fresh chives and thyme...yum!
-Preheat your oven to 400 degrees.
-Pour the melted butter onto a 9" x13" pan, tilted the pan so that the bottom is
coated with the butter.
-Evenly sprinkle the parmesan over the melted butter.
-Sprinkle the paprika, garlic powder and any additional herbs over the parmesan.
-Place the potatoes (with the cut side down) onto the pan.
-Roast the potatoes for 40 minutes.
-Allow the potatoes to cool slightly (about 5 minutes) before removing them from
the pan. (Remove them too soon and the parmesan will be stuck on the bottom
of the pan; you want the parmesan crust to stick to the potato!)
