Apple Bread with Caramel Icing

Bread Ingredients:

    • 1 cup unsweetened applesauce
    • 1/2 cup sugar
    • 1/2 cup brown sugar
    • 2 eggs
    • 2 tablespoons coconut oil (melted)
    • 1 teaspoon pure vanilla extract
    • 2 cups flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • large pinch of salt
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1 large apple, peeled and diced (about 1 1/2 cups diced 1/4"-1/2" cubes)

Icing Ingredients:

    • 1 stick butter
    • 1/2 cup brown sugar
    • 1 tablespoon light cream

-Preheat your oven to 350 degrees fahrenheit. Spray a 9 x 5 inch loaf pan with non-stick

cooking spray.

-In a large bowl, whisk together applesauce, sugars, eggs, coconut oil and vanilla until

combined.

-In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and

nutmeg until combined. Add into the applesauce mixture, stirring just until combined.

-Fold in the chopped apples.

-Pour batter into your prepared pan. Bake for approximately 65 to 70 minutes, until a

toothpick inserted into the middle of the loaf comes out clean.

-Allow the bread to cool for about 10 minutes and then remove from the pan. Place the

bread onto a cooling rack and allow to cool completely.

-When bread is completely cooled, prepare the icing. Melt the butter in a small saucepan over

medium heat. Whisk in the brown sugar and the cream. Bring to a boil, whisking constantly.

Continue to whisk for two minutes as it boils.

-Remove the icing from the heat and allow it to cool for at least 15 minutes; it is too runny to

pour over the bread when it is still boiling hot! Stir it occasionally as it cools. It will thicken

slightly. Pour the thickened icing over your apple bread (or use a spatula to spread it if it has

cooled too much and is no longer pourable).
