Chia & Coconut Pudding Breakfast Bowl (3 servings)

Pudding Ingredients:

    • 1 (13.5 oz.) can of coconut milk (either full-fat or light, your choice)
    • 1/3 cup chia seeds
    • 1 tablespoon agave syrup
    • 1/2 teaspoon salt
    • 1/2 teaspoon vanilla

Toppings: Assorted fresh berries, bananas, jam, granola, shredded coconut

Pudding must be prepared in advance! I usually stir it together the night before...but it will keep for several days, tightly covered in your refrigerator.

To prepare pudding:

-Whisk together coconut milk, agave syrup and vanilla in a medium bowl; when combined, whisk in chia seeds

and salt.

-Cover and refrigerate overnight. Stir before serving.

To serve:

-Place about 2/3 cup of the pudding into a bowl. Top with a swirl of jam, sliced bananas and berries. Sprinkle

with shredded coconut and granola.
