Baked Strawberry Oatmeal Crumble

Base ingredients:

    • 3 cups old-fashioned oats
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 egg
    • 2 cups milk (I used 1%, used what you like)
    • 1/4 cup melted coconut oil
    • 1/4 cup brown sugar
    • 1/4 cup white sugar
    • 2 cups strawberries, halved

Topping ingredients:

    • 3/4 cup brown sugar
    • 1/4 cup flour
    • 4 tablespoons cold butter, cut into pieces
    • 1 teaspoon ground cinnamon
    • 1 cup chopped walnuts or pecans

Whipped cream or vanilla ice cream, for serving.

-Preheat your oven to 400 degrees. Spray and 8 x 8" baking pan with nonstick spray

(I used coconut oil, use what you like).

-In a medium bowl, whisk together the oats, baking powder and salt.

-In a large bowl, whisk together the egg, milk, coconut oil, brown sugar and white sugar.

Stir in the oat mixture until combined.

-Pour into the prepared baking pan (it will be watery!) and bake for 18 minutes.

-While the oats are baking, prepare the topping: in a blender or food processor,

process all of the topping ingredients until combined. Add the chopped walnuts/pecans

and pulse briefly--you do not want the nuts to be pulverized, just chopped into tiny

pieces.

-Remove the oats from the oven and spread the strawberries on top. Gently push the

strawberries down into the oats. Sprinkle the topping onto the strawberries. Bake for an

additional 18 minutes.

-Serve warm, topped with whipped cream or vanilla ice cream. Or both!
