Grilled Chicken Sandwiches with Satay Sauce
- 3 large boneless chicken breast halves
- 2 tablespoons olive oil
- 1 tablespoon grill seasoning mix
- juice of 1 lime
Sauce ingredients:
- 1/2 cup peanut butter
- 1/2 cup apple juice
- 3 tablespoons soy sauce
Crunchy veggies
- 3 cups of your favorite crunchy veggies, shredded or chopped (like carrots, radishes, celery, cucumbers, lettuce)
- 4 large crusty rolls or sub rolls
- 1 clove of garlic
- -Measure the olive oil and grill spice into a medium bowl, juice the lime and mix it in.
- -Slice the chicken breasts in half horizontally, by placing your palm on top of the
- chicken, firmly holding it down and sliding your knife through the middle.
- -Place the chicken breasts into the bowl with the marinade. Stir them until they are
- well-coated. Allow them to marinate for about 10 minutes. Preheat your grill to
- medium/high while you are waiting.
- -Whisk together the sauce ingredients. Set aside.
- -Grill your chicken until done, about 2 to 3 minutes per side.
- -To toast the rolls: smash the garlic clove with the flat of your knife. Remove the
- peel, and rub the garlic onto the surface of the rolls. Place the rolls under your
- broiler for about 1 minute, until toasted.
- -Slice the chicken into strips. Layer the chicken onto the rolls and drizzle with the
- peanut sauce. Top with shredded lettuce and veggies of your choice.
