Mexican Roasted Corn Salad

  • -16 oz. grilled or roasted corn (found in the frozen vegetable department)
  • -juice from 2 limes
  • -1/2 cup chopped cilantro
  • -1/2 cup crumbled Cotija cheese, plus additional for topping
  • -2 scallions, chopped
  • -1/3 cup Crema Mexicana
  • -1/2 teaspoon EACH ground cumin, chili powder
  • -3/4 teaspoon smoked paprika
  • -pinch EACH sea salt and ground black pepper

-Heat corn according to package directions.

-Stir in all remaining ingredients.

-Serve immediately, with additional crumbled cotija for topping.
