Mexican Roasted Corn Salad
- -16 oz. grilled or roasted corn (found in the frozen vegetable department)
- -juice from 2 limes
- -1/2 cup chopped cilantro
- -1/2 cup crumbled Cotija cheese, plus additional for topping
- -2 scallions, chopped
- -1/3 cup Crema Mexicana
- -1/2 teaspoon EACH ground cumin, chili powder
- -3/4 teaspoon smoked paprika
- -pinch EACH sea salt and ground black pepper
-Heat corn according to package directions.
-Stir in all remaining ingredients.
-Serve immediately, with additional crumbled cotija for topping.
