Nectarine Crisp
Topping Ingredients:
- 4 tablespoons butter, melted
- 1/2 cup chopped pecans
- 1/3 cup flour
- 1/3 cup brown sugar
- 1/2 cup rolled oats (not quick-cooking oats)
- 1 teaspoon cinnamon
- pinch salt
Filling Ingredients:
- 8 to 10 ripe nectarines, sliced about 1/4-inch thick (enough to fill a 10-inch skillet)
- 1/2 cup sugar
- 2 tablespoons corn starch
- 1 teaspoon vanilla
- 1/4 teaspoon cinnamon
- pinch nutmeg
- pinch salt
Additional butter or coconut oil, for brushing the pan.
-Preheat oven to 375 degrees fahrenheit.
-Grease an oven-proof 10-inch skillet with butter or coconut oil (or use non-stick cooking
spray). Set aside.
-Mix topping ingredients in a medium bowl until combined.
-Place sliced nectarines in a large bowl. Sprinkle remaining filling ingredients over the nectarines.
Stir to combine.
-Place nectarines into your oven-proof skillet, smoothing them with a large spoon to be sure they are
evenly distributed.
-Sprinkle the topping over the nectarines.
-Bake for approximately 25 minutes, until the topping is browned and crunchy and the nectarines
are cooked through.
-Serve warm, topped with whipped cream or vanilla ice cream.
