Churros Poppers (makes about 30 poppers)
For dipping: 1/2 cup sugar, 1 Tablespoon cinnamon
-Heat 2 1/2" of oil in a deep fryer to 375 degrees.
-In a small bowl, combine 1/2 cup sugar and 1 tablespoon of cinnamon for dipping. Set
aside.
-Place water, sugar, salt and vegetable oil in a medium (4 quart) saucepan over medium
heat. Stir to combine.
-Bring to a boil. As soon as it starts to boil. remove from the heat.
-Stir in the flour until mixture forms a ball. Let cool for about 10 minutes, until it has cooled
enough to handle.
-Roll into walnut-sized balls.
-Fry in batches (do not crowd) until golden brown.
-While still warm, roll poppers in the sugar/cinnamon mixture to coat.
