garnishes: mint sprigs, pineapple spears
Note: Any size glasses may be used, as long as you pour a 50/50 ratio of seltzer/mojito
mixture!
-Place lemon slices into a small pitcher. Rub the mint leaves between your palms
(to release the oil from the leaves), and then tear the leaves (1/2" pieces) into the pitcher.
Stir in the limoncello, pressing the lemon slices and mint leaves with the back of your
spoon to muddle the flavors.
-Stir in the pineapple juice and the rum.
-Fill your (10 to 12 oz) glasses with ice. Pour seltzer into the glasses until half-full. Top
with mojito mixture.
-Garnish and serve.
