Cheesy Chicken Quesadillas with spinach
- 3 cups shredded cooked chicken
- 1 1/2 cups shredded Monterey Jack
- 1 1/2 cups shredded cheddar
- 3 scallions, thinly sliced
- 1/4 cup chopped cilantro
- 2 teaspoons garlic powder
- 2 cups baby spinach
- 8 tortillas
salsa, for dipping
- Mix the cheese, scallions, cilantro and garlic powder in a bowl.
-Preheat a skillet to medium heat. Drizzle a bit of olive oil into the skillet (or spray with
olive oil spray).
-Layer the ingredients for your quesadillas in the skillet:
A tortilla on the bottom, 1/3 cup of the cheese mixture, 2/3 cup of shredded
chicken, 1/2 cup of spinach leaves, then another 1/3 cup of the cheese mixture. Top
with another tortilla, and brush some olive oil on top of the tortilla (or spray with olive oil
spray).
- Cook for about 2 minutes per side. Cover with foil to keep warm as you continue to
assemble and cook the remaining quesadillas.
-Cut into wedges and serve.
