Watermelon Salad with Seared Halloumi
(serves 4 to 6)
Salad Ingredients:
- 6 oz Halloumi cheese, sliced 1/4-inch thick
- 5 cups cubed watermelon
- 2 tomatoes, cut into wedges
- 3 cups baby spinach leaves
- 1/4 cup shredded basil
olive oil, for searing the cheese
Dressing Ingredients:
- 1/3 cup red wine vinegar
- 1/4 cup honey
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon minced shallot
- 2 teaspoons dijon mustard
-In a small bowl, whisk together dressing ingredients. Set aside.
-Heat a skillet over medium heat. Drizzle in just enough olive oil to coat the pan (one to
two teaspoons).
-Add the cheese slices to the skillet and sear for one minute on each side, until golden.
Remove cheese from the skillet and drain on a paper towel.
-When cheese is cool enough to handle, slice into sticks (1/4-inch wide).
-To assemble the salad: arrange spinach leaves on the bottom of a shallow serving dish.
Top with tomato wedges, watermelon cubes and seared Halloumi. Sprinkle with
shredded basil. Drizzle with dressing and serve.
