Tomato & Pesto Phyllo Tarts

    • 1 package (15-ct) phyllo dough tartlets
    • 3 tablespoons prepared pesto
    • 10-12 grape tomatoes, chopped
    • 1/3 cup shredded mozzarella
    • salt & pepper

-Preheat your oven to 400 degrees fahrenheit.

-Line a baking sheet with parchment. Place phyllo dough tarts onto the baking sheet.

-Fill the tarts with 1/2 teaspoon pesto, 1 teaspoon chopped tomatoes, 1 teaspoon shredded

mozzarella. Season to taste with salt and pepper.

-Bake for 6 to 8 minutes, until the mozzarella has melted and is starting to bubble.

-Serve immediately or at room temperature.
