Stuffed Mushrooms
- 24 oz. whole mushrooms, stems removed
- 1 1/4 cup seasoned bread crumbs
- 1/2 cup melted butter
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder (only if using unseasoned bread crumbs)
- 3 slices bacon, cooked crisp and crumbled
- 1 cup shredded Monterey jack cheese
olive oil, for greasing the pan (or line baking pans with parchment)
-Preheat your oven to 375 degrees.
-Melt the butter in a medium-sized bowl (large enough to easily hold and stir all of the ingredients in).
1 minute on HIGH in your microwave.
-Add the bread crumbs, sour cream and cheese. Crumble in the bacon. (If you are using unseasoned
bread crumbs, add the garlic powder also.) Stir to combine.
-Grab a tablespoon of the stuffing, form it into a ball and stuff it into the mushroom.
***<<<You can freeze the mushrooms at this point, to be cooked at a later date. Place the stuffed,
uncooked mushrooms into a zip lock freezer bag. They will keep in your freezer for up to
a month.>>>***
-Bake in your preheated 375-degree oven for about 20 minutes (25 minutes if they were
frozen), until the mushrooms have softened and the stuffing is starting to brown and crisp on the top.
