Strawberry/Spinach/Bacon/Wonton Salad w/Strawberry Vinaigrette

Strawberry, Spinach, Bacon & Wonton Salad with Strawberry

Vinaigrette

For the vinaigrette:

  • 1/2 cup canola or vegetable oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon ground mustard
  • pinch sea salt
  • 1/2 cup seedless strawberry jam

For the salad:

  • 4 cups salad greens (romaine, red leaf, green leaf lettuce--your choice)
  • 4 cups baby spinach
  • 1 1/2 cups sliced strawberries (about 10 to 12 large strawberries)
  • 4 slices thick bacon, cooked crisp and crumbled
  • 1 cup wonton strips

--Whisk together all of the dressing ingredients in a small bowl. Set aside while you assemble the salad.

--Cook and crumble the bacon. Wash and chop the greens. Remove the stems from the strawberries and slice or cut

them into bite-sized pieces.

--Layer the spinach and greens into your salad dish, and top with the strawberries, bacon and wonton

strips.

--Add the dressing and toss the salad, or serve the salad on individual plates with the dressing drizzled on top.
