Strawberry Lemonade (makes approx. 8 cups)
- (1 cup simple syrup (see note)
- 1 cup fresh-squeezed lemon juice
- 1 1/2 cups fresh strawberries
- 4 to 6 cups water
- 2 cups ice cubes
EXTRAS: Lemon wedges and strawberry slices for garnish; Limoncello for adult beverage
NOTE--to make simple syrup: heat 8 oz. water for 2 minutes on HIGH in your microwave.
Stir one cup of sugar into the hot water until it dissolves.
-In a blender or food processor, puree the strawberries with 1 cup of water.
-Place a fine-mesh strainer over a bowl, and pour the puree into the strainer so the juice
drains into the bowl. After the juice has drained, stir one more cup of water into the
pulp in the strainer and continue stirring until all the juice has drained. Discard the pulp.
-Place the ice cubes into a large (64 oz) pitcher. Add the simple syrup, lemon juice,
strawberry juice and 4 cups of water. Stir, then taste (may need additional water or
simple syrup, depending upon the tartness of the lemons or sweetness of the berries)!
-Pour into ice-filled glasses (garnished with a lemon wedge and strawberry slice on the
rim). For adult beverages, top off with a shot of limoncello.
