Shrimp Canapés

    • 3 tablespoons softened butter
    • 1 tablespoon minced celery
    • 1 teaspoon minced scallion
    • 1/2 teaspoon seasoning mix* (see note)
    • 1 package melba toast (you will need 20 to 25 pieces)
    • 1/2 lb 41/50 ct. fresh cooked shrimp, tails removed

chopped celery leaves, for garnish

*note: to make seasoning mix: combine 1 teaspoon celery salt, 1/2 teaspoon ground black pepper,

1/4 teaspoon paprika and a tiny pinch EACH of nutmeg, cinnamon

and ground mustard. You will only need 1/2 teaspoon of this mixture

for this recipe.

-Combine softened butter, minced celery, minced scallion and 1/2 teaspoon seasoning mix.

-Spread approximately 1/2 teaspoon of butter mixture onto each melba toast.

-Place one shrimp on top of each buttered melba toast.

-Sprinkle with chopped celery leaves, if desired. Serve immediately.
