Shisito Peppers and Prosciutto

    • 1 tablespoon olive oil
    • 12 oz shisito peppers (I buy them in 6 oz. cellophane bags at Trader Joe's)
    • 1/4 pound (about 6 or 7 slices) of paper-thin prosciutto, each slice cut into 1/4-inch strips
    • 1 tablespoon chopped mint

-Heat the olive oil in a large frying pan or large shallow saucepan over medium high heat.

-Saute the peppers for 3 to 4 minutes, stirring occasionally, until they start to char.

-add the prosciutto and sauté for 2 minutes, until the prosciutto starts to get crispy.

-toss with the chopped mint and serve immediately.
