Oreo Peppermint Bark
- 2 bags (11 or 12 oz each) white chocolate chips
- 1 tablespoon coconut oil
- 12 to 15 oreos, chopped into 1/2-inch pieces (use mint oreos if possible)
- 1 teaspoon peppermint extract
- 2 tablespoons crushed candy canes or peppermint starlight candies
- 1/4 cup semisweet chocolate chips, melted with 1 teaspoon coconut oil (for drizzling)
-Line a large baking sheet with parchment.
-Place chocolate chips and coconut oil into a medium bowl. Microwave on HIGH for one
minute at a time, stirring thoroughly after each minute until chips are completely melted.
This should typically take 2 minutes, depending on the power of your microwave.
-Stir the peppermint extract into the melted white chocolate.
-Pour the chocolate onto your prepared baking sheet and spread evenly. Immediately sprinkle
the chopped oreos onto the chocolate, pressing lightly to adhere.
-Drizzle with the melted semi-sweet chocolate. Sprinkle with the crushed peppermint candy.
-Allow to cool slightly before refrigerating (you don't want to place a warm tray into your
refrigerator, it will raise the overall temperature of the inside of your fridge). Place the
peppermint bark into your fridge to harden. Break into pieces before serving.
