Muffin Tin Mini Pizzas

-5 large flour tortillas

-1 1/2 cups pizza sauce

-1 cup shredded mozzarella cheese

-1/2 cup shredded fontina cheese

-1/4 cup grated parmesan cheese

-1/4 cup chopped pepperoni slices

-2 tablespoons chopped fresh basil

-2 tablespoons chopped fresh chives

-Add any additional toppings you like such as chopped fresh tomatoes, chopped mushrooms,

chopped peppers, cooked crumbled sausage

-Preheat your oven to 425 degrees.

-Spray two (12 ct each) muffin tins with nonstick cooking spray.

-Using a circular cookie cutter (3 to 4 inch diameter), cut 5 circles from each tortilla.

-Press each tortilla circle into the well of a muffin cup so that the bottom is covered and the sides

are as even as possible.

-Spoon about 1 tablespoon of sauce into each tortilla pizza. Sprinkle with cheese.

-Add toppings, taking care not to go above the side crusts of the tortillas.

-Bake for 10 minutes, until the cheese is bubble and the tortillas are crispy.

-Sprinkle with basil and/or chives and serve immediately.
