Fruity Quinoa (adapted from The Meat Free Monday Cookbook by Paul McCartney)
- 1 cup almond milk
- 1/2 teaspoon vanilla extract
- 1/3 cup quinoa (rinse in water to remove bitter coating)
- 1/4 cup mixed berries of your choice
- 1 tablespoon chopped pecans or walnuts
- honey, for drizzling
- In a small saucepan over medium/high heat, bring almond milk and vanilla extract to a boil.
- Reduce the heat to low and stir in quinoa. Simmer for 10 minutes until most of the liquid has been absorbed.
- Remove from heat and stir in berries and nuts.
- Divide into two bowls. Drizzle with honey and serve.
