Crunchy No-Bake Chocolate Bars

  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup creamy peanut butter
  • 1/3 cup honey
  • 3 tablespoons butter
  • 1 1/2 cups old-fashioned (not instant or quick-cook) oatmeal
  • 1 1/2 cups unsweetened shredded coconut (or coconut flakes)
  • 1 cup chopped walnuts
-Line an 8x8-inch baking pan with parchment.
-Place chocolate chips, peanut butter, honey and butter into a large bowl.  Microwave on 
 HIGH for 2 minutes, then stir until all is melted and combined.
-Mix remaining ingredients into the chocolate mixture.
-Evenly spread mixture into your parchment-lined baking pan.  Refrigerate until set, about 
 2 hours.  After the chocolate has set, cut bars into squares.  May be served chilled or at room
 temperature.
