Chunky Salad with Avocado & Cilantro

  • 4 large or 5 small plum tomatoes chopped
  • 3 avocados, chopped
  • 1 English cucumber, quartered lengthwise then sliced
  • 1/3 cup chopped cilantro
  • 1/2 teaspoon onion powder
  • 1 lemon, juiced
  • 2 to 3 Tablespoons Extra-Virgin Olive Oil
  • salt & pepper, to taste
optional: black olives, artichoke quarters

-Place the chopped tomatoes, chopped avocados (pits removed!) cucumber slices
 and chopped cilantro into a large bowl.  (Optional: add olives and artichoke quarters.)
-Drizzle with lemon juice and olive oil, and toss to coat.
-Sprinkle with onion powder, season with salt and pepper to taste.  Toss once more.
-Serve immediately.
