Caramel Coconut Chocolate Bark

    • 2 cups semi-sweet chocolate chips
    • 2 cups crunchy corn cereal (like Chex)
    • 12 oz. caramel
    • 1 cup toasted coconut chips

-LIne a 10 x 15 inch baking sheet with parchment

-Microwave chocolate chips on HIGH, 1 minute. Stir. Microwave on HIGH for 1 more

minute, stir until chocolate chips are melted. Spread the chocolate onto the parchment

in an even layer (it doesn't have to completely cover the parchment, just take care to

ensure that it is spread evenly.

-Sprinkle the cereal evenly onto the melted chocolate. Lightly press the cereal with your hands

so that it sticks to the melted chocolate.

-Place your caramel into a microwave-safe bowl and melt according to the directions on

the package. When the caramel has melted, carefully pour the caramel over the

cereal/chocolate. Spread evenly.

-Sprinkle the coconut chips onto the caramel and press lightly with your hands so they

adhere to the caramel.

-Melt additional chocolate chips (about 1/2 cup) if you want to drizzle more chocolate on

top. A little sprinkle of sea salt flakes is also a nice touch!

-Refrigerate for about 1/2 hour to harden. Cut into pieces and store (covered) at room

temperature.
