Caprese Chicken Wraps with Honey Balsamic Vinaigrette

    • 2 cups cooked chicken, shredded or cut into bite-sized pieces
    • Honey Balsamic Vinaigrette
    • 1 large or small plum tomatoes, chopped
    • 4 oz. fresh Mozzarella, cut into 1/2-inch cubes
    • 1/2 cup shredded basil
    • 2 cups shredded romaine lettuce
    • 6 tortilla wraps

Honey Balsamic Vinaigrette

    • 2 tablespoons olive oil
    • 2 tablespoons balsamic vinegar
    • 1 teaspoon dijon mustard
    • 1 teaspoon honey
    • 1/2 teaspoon garlic powder

-Whisk vinaigrette ingredients together in a small bowl.

-Place chicken, chopped tomatoes and fresh mozzarella into a medium bowl.

-Drizzle the vinaigrette into the bowl with the chicken/tomatoes/mozzarella. Stir

to combine.

-To assemble the wraps: evenly divide the lettuce and basil among the tortillas. Place

the chicken mixture on top of the lettuce. Fold the side edges of the tortillas in, and

roll from the bottom toward the top to enclose the filling.
