Vanilla-Banana Chia Pudding

From Chow Bella Paleo

1 cup canned coconut milk
1 cup unsweetened almond milk
4 green-tipped bananas, divided
1 vanilla pods, split in half and scraped of seeds (can also use 1/2 tsp pure vanilla extract)
Pinch of sea salt
4 tbsp chia seeds
8 tbsp chopped pecans
Chia seeds, for garnish (optional)

1. Add coconut and almond milk, 2 of the bananas, cut into chunks, vanilla, and salt to a blender or food processor, or use an immersion blender and a bowl. Stir in chia seeds. Pour into a sealed container to sit overnight.
2. Divide set pudding amongst 4 serving bowls. Add half of a sliced banana, 2 tbsp pecans, and a pinch of chia seeds on top as garnish.
