SWEDISH MEAT BALLS
2 C gr. Beef
½ C dry bread crumbs
1 egg
⅔ t salt
⅛ t pepper
⅛ t nutmeg
2 T (fat)
2 T flour
1 ¾ c beef stock (broth)
Salt & pepper [Maxine had S & P above...no need to do so twice?]
Shape into small balls, handle lightly, brown in fat. Remove from pan, blend flour & fat. Add broth, season to taste - simmer 30 min.
