RICE PUDDING

Cook 1 C instant rice (put into boiling water ~ turn off heat - 7 min)
Heat 1 qt milk in heavy saucepan- add 1 C sugar, vanilla and lemon extract - add cooked rice.
Beat 3 egg yolks with ½ C milk & 3 rounded Tbls. cornstarch. Pour little hot milk. Then combine, simmer, stick - pour into bowl.
Make meringue with whites & ¼ C sugar, ⅛ (pinch) cr. of tarter - Blob on & bake 325° 10 min watch carefully
