No Need to Knead Cinnamon Rolls
Dough:
2 C milk
1 C sugar
1 tbls salt
2 cubes butter
6 eggs - beaten
3 pkgs yeast
9-10 C flour
Bring the milk, sugar, salt & butter to a scald. Cool. Add eggs. Add yeast that has been dissolved in 1 C water (105° to 115°) w/ 2 tsp sugar. Add flour & mix well. No need to knead. Rise 2 hrs in warm place. The dough will be sticky - add more flour until you can work with it. Divide in 3 portions. Roll each portion in a rectangle - 18” x 12”.
Filling:
1 Cube butter melted.
1 lb brown sugar
2 C finely chopped nuts
Cinnamon
Divide filling between the 3 portions. Roll & cut into 1½” slices. Place on greased baking sheet, rise 2 hrs. Bake 375° about 10 min or golden brown. Frost hot out of the oven.
Frosting:
1 lb pwd sugar
½ C butter
2 tsp rum flavoring (can use vanilla)
Milk to make a smooth frosting.
