Morning Glory Muffins
Makes 24
1 C sugar
1¼ C all purpose flour
1 C white whole wheat flour (Bulk at Winco)
1 Tbls cinnamon
2 tsp soda
½ tsp salt
½ C shredded coconut (I leave this out)
¾ C raisins
1 lg apple, peeled & shredded
¾ C dried cranberries (craisins)
1 8 oz can crushed pineapple
2 C shredded carrots
3 eggs
⅔ C oil
1 tsp vanilla
½ C coarsely chopped walnuts
Oven. 325° (Spray or line with paper cups “muffin tins”)
In large bowl add & mix all dry ingred.
In separate bowl, beat eggs - add oil & liquids (pineapple) & fruit. Stir until just combined (with dry ingredients).
Spoon into prepared cups - ¾ full. Bake about 18 min - toothpick in middle comes out clean. Cool in pan for 5 min - then turn out on rack to finish cooling.
