⭐ Filled Cookies ~ Jean Brown
⭐ Jean’s Filled Cookies
½ C oil
½ C sugar
2 eggs (well beaten)
1 T cream
1 T vanilla
3 ½ C cake flour. (sifted)
2 t bk pwd.
½ t salt
Cream eggs, sugar & oil - (light & fluffy). Add cream & vanilla, mix in dry ingred. Chill - Roll in pwd sugar
Filling:
1 C ground raisins
1 C boiling water
1 C sugar
2 T flour
½ t salt
Combine sugar, flour & salt - stir into liquid ingred & cook to paste. Roll out cookie dough, put filling on ½ cut cookie circles - fold over and crimp edges.
Bake 375° for aprox 12 min. Can also use good jam for filling.
*I sprinkle pwd sugar over & make 2 or 3 slits in cookie - (just for looks)
