⭐ Pumpkin Roll
3 eggs
1 C sugar
⅔ C canned pumpkin
1 tsp lemon juice
¾ C flour
1 C walnuts (optional)
1 tsp baking pwd.
1 tsp gr. Ginger
1 tsp cinnamon
½ tsp nutmeg
½ t salt
Beat eggs 5 min - high speed. Gradually beat in sugar. Stir in pumpkin & lemon juice. Sift together dry ingred. Fold [ into pumpkin juice. Pour into greased & floured jelly roll pan. (Top w/ nuts opt.)
Bake 350° for 13 min. Turn cake onto a towel sprinkled with pwd sugar. Rollup (short side first I think?) cake. Let cool - when cool unroll - spread cream cheese filling over & reroll chill to serve.
