CEDAR PLANK SALMON
1 2 lb salmon fillet - skin on
1 cedar plank - soak in water at least 30 min
½ C light brown sugar
2 T canola oil
1 T dried thyme
1 t cayenne pepper
Preheat grill to medium. Place fish skin side down on plank. In sm. bowl mix other ingred. Spread over fish.
Place on grill & cook covered 20-30 min. Till salmon flakes easily & is opaque throughout.
Oven:
Preheat oven 350° ~ Put cedar plank on rimmed baking sheet.
Prepare salmon as described. Roast on plank for 20-25 min.
