(Apple) PIE FILLING

18 C thinly sliced apples
3 T lemon juice
Combine first 2 ingredients in big pan
4 ½ C sugar
1 C corn starch
2 t cinnamon
1 t salt
(¼ t nutmeg) optional
Add 5 C water - stir & boil 2 min. Stirring constantly add apples, bring to boil, reduce heat, cover & cook (simmer) 6-8 min. Cool 30 min. Put in freezer bags. Makes 3 pies.
