Baked Shoestring Buffet Potatoes

[Commonly referred to as Funeral Potatoes]

4  Med. bk. potatoes peeled & cut for french frys

2 T butter

½  t salt

Dash pepper

½  C grated sharp cheese - American or cheddar

2  T ch. parsley

½  C cream

Shape foil into baking dish.  Fold over to seal & keep inside -

Bake 450° an hour (till done) -

Serves 4
