Maxine's Recipe ~ Marshmellows

Marshmallows ~ Virginia Taylor

Dissolve 2  pkgs Knox gelatin in ⅓  C cold water

Set till ready.

Put 1 ¼  C white sugar & ⅓  C water on med. heat. - bring to full rolling boil.  Brush down sides.  Remove from heat after syrup boils again.  Pour boiling syrup into mixing bowl.  Pour boiling syrup into mixing bowl.  Add 1  C wh. Karo & gelatin mixture.  

Stir with ladle till gelatin is distributed.  Beat immediately on med - heat till mixture holds peak with finger test.  *Add vanilla.  Pour on prepared paper on cookie sheet (br. paper sack will work, dampen paper to peel off when set)..  Spread till 1  inch thick - (Cover w/ toasted coconut) if desired.  I use corn starch & pwd. Sug.
