STEAMED CARROT PUDDING
(Dave’s Favorite…..he loves it!!!)
2 C grated carrots
2 C grated potatoes
2 C sugar
2 C flour
2 t soda
2 t salt
1 t cinnamon
½ t cloves
½ t nutmeg
2 eggs beaten
1 C oil
1 C raisins
1 C ch. walnuts
Beat eggs well. Add oil & sugar. Then mix in all ingredients. Spray ‘Pam’ in 3 wide mouth fruit jars - fill ⅔ full with mixture. Place lid on loosely. Fill lg. Covered kettle w/ water about ¾ way on jar. Bring to boil & (covered) gently boil for 3 hours.
This pudding will not keep on shelf. It has egg & vegetables & has to be refrigerated.
Lemon Sauce:
Mix & boil:
½ C sugar
2 T corn starch
⅛ t salt
⅛ t nutmeg
1 C water
Add:
1 ½ T lemon juice (or more)
1 ½ T butter
