Spanish Rice
1 T olive oil
(2 cloves garlic)
1 med onion chopped
½ med gr. pepper diced
Add:
1 C uncooked long gr. rice
½ t salt
(¼ t cr. red pepper)
1 can diced tomatoes undrained (muir glen)
1¾ C chicken broth
Simmer 20-25 min. Till rice is tender
